Chef's Ware: Yam & Apple Bake

Serves 6

  • 11 Inch Skillet and Cover


2 Large Apples, peeled and cored

3 Large Yams, cooked and peeled


Brown Sugar


Grated Rind of 1 Orange

½ Cup Orange Juice (120ml.)


  1. Slice apples crosswise into slices about ½ inch (1-2cm.) thick. In skillet place a layer of yams which have been sliced into ½ inch (1-2cm.) circles.

  2. Cover with layer of sliced apples. Sprinkle with cinnamon and brown sugar and dot with butter. Repeat until yams and apples are used up.

  3. Mix orange rind and juice and pour apples and yams. Begin cooking at medium heat until cover is hot to touch.

  4. Reduce heat to low and cook until applies are tender, about 20-25 minutes.

  5. Be sure to cover floats easily on the vapor seal during most of the cooking time.
