Chef's Ware: Greaseless Fried Chicken

Serves 3-4

  • Electric skillet or 11 Inch skillet and cover or 12 ½ - inch family skillet and cover


3 to 4-pound chicken, cut in pieces for frying (1 ½ to 2 kilos)

Salt and pepper for taste


  1. Preheat electric skillet at 400 degrees (or 11- inch or 12 1/2- inch skillet on medium heat).

  2. Wash chicken and blot dry with paper towels.

  3. Place chicken in pan, meaty side down (NOTE: if cooking with skin on chicken, place skin side down.) season with salt and pepper.

  4. Fry with lid tilted for 15-20 minutes. Turn chicken, season and cook for 5 minutes with lid tilted.

  5. Cover completely and turn to simmer for 5-10 minutes, depending on size of chicken.


  • If you flour or batter chicken, you must use oil. Leave lid off or tilted.
